  • 500g strong bread flour                                                              
  • 100g sourdough starter (active) 
  • 325ml water 
  • 10g salt 

Instructions: 

  1. Prepare the Dough: In a large bowl, mix the flour and water. Let it rest for 30 minutes before adding the sourdough starter and salt. 
  1. Bulk Fermentation: Cover and let it rest at room temperature for 4-6 hours, folding the dough every 30 minutes. 
  1. Shape and Proof: Shape the dough into a round and place it in a proofing basket. Let it rise for another 2-4 hours. 
  1. Preheat the Monolith: Set up the Kamado Monolith for indirect heat at 230°C (450°F) with a pizza stone. 
  1. Bake the Bread: Place the dough on the preheated stone and bake for 35-40 minutes, until golden brown.
